Chef Craig Hopson and Friends Celebrate the End of the Harvest

There is a fun holiday for everything these days, so why shouldn't snails get their due too? Chef Craig Hopson of One if by Land, Two if by Sea (17 Barrow Street, NYC, 212-228-0822,) in association with Douglas Dussault of Potironne Company, is celebrating National Escargot Day by serving a 6-course tasting menu with each dish (including dessert!) featuring Wild Burgundy Snails ($85/ $135 with wine pairings). Even our bar chef is getting into the act and creating a cocktail that somehow or another will involve a snail, and our wine director will pair the perfect wine served alongside each course. Why May 24 is chosen for this year's celebration is anyone's guess, but Dussault equates it to the end of the harvest which happens this time of year. Either way it's a great way to celebrate the creativity of Chef Craig Hopson and these tasty morsels.

As a prelude to the May 24 event, on Wednesday, May 21 Chef Hopson has invited some of his escargot loving chef friends to join him in the celebration. Terence Brennan (Picholine, Artisinal) Damon Wise (Craft), Olivier Muller (DB Bistro Moderne), and Cyril Renaud (Fleur de Sel) will join Craig Hopson in the kitchen at One if by Land.... Each chef will prepare a course incorporating the Wild Burgundy Snail, which are being donated by Dussault's company. To give to those less fortunate the ownership of One if by Land... has chosen God's Love We Deliver as the beneficiary from this unprecedented dinner.
